I don't know for sure. I wish I could give some insight about what is really in those things. But I went to the Taipei food show last year, and their was a HUGE section on hot pot ingredients, and there are some suppliers that make "natural" food balls (I am not sure what the proper term for them is.)
And, I agree, they can be quite scary. So your options are to find a store or restaurant that sells some natural products, or stick to making hot pot at home.
I know Jason's and some small natural food stores sell some nice fish balls, made from high quality fish.
When I do the hot pot at home thing, I stick to just veggies, mushrooms and the fried, greasy tofu skin (who can resist.)
But, when we go to the local Shabu Shabu, I always get the "vegetarian" selection which comes with tons more veggies, and I slip the indiscriminate balls into my boyfriend's pot when he is not looking.
Oh, and don't get me started on the veggie meat substitutes here in Taiwan. I stay away from those things, and I think everyone should. They usually taste like imitation smoke flavor combined with some coagulated styrofoam substitute.

No there is no register. A company with a logo might want a new one. A company without one might never want one. You need to advertise your services and have the people come to you. Promote on webmaster boards and design forums.
