They usually don't bite out of aggression, usually just bite to eat. She was probably just hungry. 10 weeks is a long time to go without food, even for a snake, were you offering her food that whole time, and she just didn't want it?
She should definitely be handled more than once or twice weekly. If your concerned about getting bitten again, just put a pair of gloves on next time you handle her.
